While great lengths were taken to preserve the 1840s home—the second oldest structure in Austin—throughout the extensive expansion process, the architecture is just one of the many compelling aspects of the new fine dining venture opening this October. “We deliberately designed the space so that it was immediately clear what was old and what was new,” says partner Bob Gillett. “When you sit in the plush soft seating on the patio in front of the home or at the concrete back bar facing the old milk house, the beauty of the original property is really showcased and stands out in stark contrast to the modern elements.” Nestled in a grove of trees along West Riverside Drive near South Lamar Boulevard, the charming site overlooks Lady Bird Lake and the downtown skyline. Guests can claim a spot in the elegant, contemporary lounge outdoors and savor a glass of wine or signature aperitif, such as the Quince and Pomegranate Champagne Cocktail or Whiskey with Homemade Blood Orange Bitters. A night of indulgence begins with a cheese plate, charcuterie selection or appetizer such as the Butter-Poached Maine Lobster with Parsley-Potato Puree and Grapefruit or the Bandera Quail Breast served with a Chanterelle-Leek Risotto and Baby Bok Choy. Dinner is served in an upscale café seating area outdoors or, for a more refined and intimate experience, within the home. Given the juxtaposition of historic and modern elements throughout the site, it made perfect sense to showcase the work of local artists Roi James and Shawn R. Camp inside the restaurant. While James creates stunning masterpieces in the Old World style, Camp’s raw abstract work is a visual explosion of texture. Renowned chef Shane Stark, a graduate of the Culinary Institute of America, creates seasonal menus based upon the available offerings, incorporating local and organic goods in the New American cuisine whenever possible. A sample menu might include Oxtail Consommé with Marrow and Shiitake Shumai and Fresh Herbs to start, followed by a Frisée Salad with Quail Leg Confit, Poached Quail Egg and Bacon-Shallot Vinaigrette and finally Barnegat Sea Scallops with Foie Gras Mashed Potatoes, Asparagus and Black Truffle Butter or a divine Rack of Lamb with Baby Carrots, White Bean Purée and Mint Pesto. Post-dinner (or perhaps after a show at the nearby Long Center for the Performing Arts), patrons can enjoy a dessert wine, port, homemade pastry or cigar al fresco. Husband and wife team Tom and Tori Tinnon serve as managing partners and are present at every turn, ensuring that guests feel at home and that their every need is met and surpassed with exceptional service and care by the seasoned waitstaff.
